Hey Strawberry lovers - here’s a great recipe for the strawberries you didn’t eat in the fields or on the way home from your favorite U-pick farm.
1 package graham crackers, crushed
6 tablespoons butter or margarine
1/3 cup sugar
Combine all ingredients and spread evenly into a pie pan. Bake for about seven minutes. Cool completely.
1 - 8 ounce package cream cheese
1/2 cup powdered sugar
1 cup whipped topping (e.g. truwhip or Cool Whip)
Combine softened cream cheese with powdered sugar and cream until smooth. Fold in Cool Whip. Place in cooled crust. Chill until set.
1 cup fresh strawberries, mashed
3 cups fresh strawberries, sliced
1 cup sugar
3 tablespoons cornstarch
1/3 cup water
1/4 teaspoon salt
In a saucepan, combine sugar and cornstarch. Stir in mashed strawberries, salt and water. Cook over medium heat until mixture comes to a full boil. Cool and then mix sauce with sliced fresh strawberries. Place on top of cheesecake.
If you have extra strawberries, use on ice cream.
