Tasty Holiday Fare
Try these creative and healthy dishes for Memorial Day get-togethers!
Warm German Potato Salad
2 lbs. small red potatoes (about 2 inches in diameter), washed well
1 tsp. Liquid Smoke
1 large onion, chopped
2 shallots, chopped
½ tsp. natural cane sugar
2 Tbls. cider vinegar
½ cup vegetable broth
1½ Tbls. chopped fresh parsley leaves plus extra for garnish
In a large saucepan, combine potatoes with salted water to cover by 1 in. Simmer until just tender, about 20 min.
Drain potatoes and let stand until cool enough to handle. Slice potatoes in a bowl and combine with Liquid Smoke. Keep mixture warm, covered.
Sauté onions and shallots over moderately high heat in Earth Balance, stirring, until well-browned. Add turbinado sugar, 1Tbls. vinegar, and broth and simmer 2 min. Add onion mixture to warm potatoes with parsley and remaining 1 Tbls. vinegar, tossing gently. Season with salt and pepper.
Serve warm or at room temperature, garnished with parsley.
Spicy Jamaican Jerk Tempeh
1 clove garlic, minced
¼ cup minced fresh ginger
¼ cup thinly-sliced scallions (white and light green parts only)
½ small habanera chile, seeded and minced (use gloves or coat finger tips with oil first and don’t touch your face)
1 tsp. salt
1 ½ tsp. allspice
1 ½ tsp. thyme
¼ tsp. freshly-ground pepper
½ tsp. ground cinnamon
½ tsp. ground nutmeg
2 Tbls. olive oil
1 Tbls. lemon juice
¾ cup apricot, peach, or apple juice
2 Tbls. pure maple syrup
2 (8 oz). packages tempeh, each cut into 10 thin strips
Preheat the oven to 350 degrees. Prepare marinade: Add everything but the tempeh and scallions into the processor and blend until smooth.
Pour into large, shallow baking dish. Whisk in scallions and add tempeh, turning to coat. Cover and bake, 40 min. Remove from oven and let stand 5 minutes before serving.
